The Elicottville Distillery is a joint endeavor between three partners: Bryan Scharf, who will be the distillery manager and in charge of most of the day-to-day operations, Charlie Bares, who owns the farm most of the products will be grown on, and Kathleen Moriarty, attorney and “silent partner.”  They sell a line of spirits called "The Agronomist", stemming from the word agronomy.

Together, they have opened the doors to their new distillery at 5462 Robbins Rd near Ashford Junction (where Rt. 240 meets Rt. 242) and welcome visitors:

Fridays from 4pm - 8pm
Saturdays from 12pm - 4pm
Sundays from 12pm - 3pm. 

Cocktails are available right at the distillery, thanks to a Craft NY Act and are designed to bring out the natural flavors of the ingredients.  Most ingredients are locally sourced and bottles are available for purchase as well.
